Nicole Brisson Is the Best Steak Chef in America

When you first meet Chef Nicole Brisson, you’d never guess she is responsible for the best steak in Las Vegas, and perhaps the best steak on the West Coast. In the male-dominated steak world, it can be really hard to envision her handling large cuts of meat in Carnevino’s off-site aging facility, but that is exactly what she does – and it has made her a legend in the culinary community. This reputation has recently earned her the position of Culinary Director of Mario Batali and Joe Bastianich’s four Las Vegas Restaurants.

NicoleBrisson-pic1Chef Brisson has worked for Batali and Bastianich since 2007, and became much-loved leader of Carnevino in 2010, where their amazing porterhouses and ribeyes have become the envy of almost every steakhouse in America.

LeAnne Notabartolo of Good For Spooning said of Chef Brisson that she “is a culinary badass. In addition to cooking and recipe development, menu creation and running a full back of the house staff, she oversees a dynamic meat program including charcuterie and dry aging and works with the best meat producers in the country to create a one of a kind dining experience.”

Anyone who knows steak, knows that they should try Carnevino for at least once in their life – and while Batali and Bastianich (B&B) are behind the genius of Carnevino, Chef Brisson has been the third “B” bringing their vision to life for almost a decade.

Chef Brisson took a little bit of time off while she got settled down with her new position, and we asked her a few questions about the industry and where it is going. Enjoy!

What does the Culinary Director position mean? Will you still be spending time in the kitchen?
The Culinary Director oversees all four Batali properties. I will be tasting and developing menus with the chefs and covering the line when need be but will be in the kitchen less than before. It will keeping constant communication between New York and Vegas. This is going to be very different for me but a learning experience and a lot of fun. I have a great team of chefs and I’m confident we can continue to focus on great food and educating the FOH/BOH staff as well.

Carnevino-steak-588What ingredients go into a perfectly dry aged steak? Where do some restaurants cut corners?
There are no actual ingredients in the dry aging process. We keep our room at 38-40 degrees, have constant air flow and about 85 percent humidity. When the steaks are cooked, they are just seasoned with kosher salt, swabbed with fresh rosemary, garlic and EVOO. When you start out with a great product, there is no need to add a lot of other ingredients. If I didn’t have Mario and Joe behind the program, we would never be able to have the quality we have. You’re sitting on an enormous amount of product for three months before your even able to make money on it. Not only do you have to factor in the labor but also that we’re losing 25 to 30 percent of unusable waste on each Ribeye or Shortloin.

You mentioned that you will still be overseeing the off strip aging facility. What have you enjoyed about being that involved in the selection and aging process of the cuts of beef?
I have always enjoyed the entire process at offsite. It is an incredibly primal feeling. It reminds me of chopping wood as a kid it’s almost therapeutic in a way. All you are thinking about is the meat, weighing, tagging and rotating and of course selecting riservas. I also enjoy the fact either Chef Jon Littleton or I have physically touched every piece of meat that has been served at Carnevino. You know the quality of the product and are completely invested into the program. I don’t know many chefs who can actually say that.

Why do you think that Batali and Bastianich support their chef’s quality food while some establishments have to cut quality to make more money?
I would of never stayed in Vegas if it weren’t for Mario and Joe using the quality ingredients they do in their restaurants. Some people get into this business solely to make money and some of us are here because we have endless passion for food and cooking.

Las Vegas has a lot of hotels with people who need to make certain percentages that can sometimes make chefs or restaurants cut quality on certain products. We are independently owned which gives us the freedom to keep quality and consistency.

What is one dish that you made at CarneVino that you consider “your own” and your most proud of.
We constantly are changing the menus based on seasonality. One of my most recent spring items at Carnevino I am proud of is the dungeness crab crespelle. We are buying the crab from the Smolen Brothers. The crab itself is so sweet and delicious and pairs very well with the asparagus.

Where is Italian going now? What are trends that will be big in 2016-17? Anything that your going to be introducing that we should look forward to?
I think people are recognizing traditional Italian food now because of chefs like Mario. When I got diagnosed with Hashimotos and latter with celiac, it has really changed Italian food for me personally.

The more all these autoimmune diseases keep surfacing, I think the days of bottomless pasta dishes will diminish. Even this year at Cibus in Italy, you see a lot more gluten-free products. So many chefs dismiss the seriousness until you or a loved suffer from a chronic illnesss and see the pain it can cause. The chefs and I are already working on summer menus to be released the end of June. Chef Brett Uniss at B&B Ristorante has a great palate and we will continue to bring in whole pigs, lambs and cows and change the regional menus.

What would your last meal be if you could eat anywhere, and eat anything?
Everything at Raku! The tofu, the bonito guts, any of the sashimi, the ice fish, the silver skin, skewered intestine. If you can’t tell already I eat there as much as I can.

Calvin Harris to Return to Hakkasan after Car Crash

Calvin Harris, known mainly for being a DJ and having the balls to date Taylor Swift, has announced that he will be returning to Hakkasan on Thursday, May 16th after suffering a minor car crash in Beverly Hills.

He has not been working Omnia and Hakkasan since the accident, having suffered a minor “cut on his nose” that required him to “rest up.” There is no word if he cried or not.

Harris, whose really name is Adam Wiles, said he was in “in shock” after the SUV he was being driven in collided with a car.

The other driver was a teenage girl who “wanted to be closer to Calvin Harris,” so ejected herself from her Volkswagen Beetle, and broke her pelvis. Harris has no comments about the young lady, but she is expected to make a full recovery.

Celine Reveals Prince Wanted to Do Vegas Show

*After her emotional performance of Queen’s “The Show Must Go On” and subsequent tear-filled speech at Sunday night’s Billboard Music Awards, Céline Dion spoke to “Extra” backstage the night’s other big honoree, Prince.

Dion spoke about the time they met after he attended one of her Las Vegas shows. She said Prince expressed interest in doing a Vegas stand of his own.

“He asked me, ‘How is it to perform in Las Vegas, and how is it really, because I’m thinking maybe to come, but I really want to know,” Dion said.

Céline also revealed that Prince once wrote a song for her.

“All that,” she said, referring to her personal run-in with the musician and his tribute during Sunday’s ceremony, “just added to the emotion of the night.”

 

Johnny Manziel Kicked Out of Jewel in Aria

Following another run-in with the law, Johnny Manziel said he hoped to take “care of the issues” and play in the NFL in 2016.

So much for keeping hope alive.

The former NFL quarterback was reportedly n trouble again during the weekend. Manziel was booted from Jewel in Aria after allegedly punching a man during an altercation Friday night, according to a report.

According to the report, Manziel was in a VIP booth close to the stage when hip-hop star Drake made an appearance for a surprise performance. As the crowd moved forward toward the stage, Manziel was pushed. Manziel allegedly turned around and took a swing at the man who shoved him.

The incident is just the latest one for the 23-year-old Manziel, who was cut by the Cleveland Browns in March. The Browns move came after Manziel was accused of hitting an ex-girlfriend in January, an incident that led to him being indicted by a Dallas grand jury. Manziel has also been fired by two agents in the past three months.

Free Tours start at 11am and 1pm daily on their website.  Chef Matthew Piekarski has made chocolate unique. “As a chocolate maker, we purchase cacao beans directly from farmers, which we then sort, roast, and grind here in our exhibition kitchen to make chocolate. Our chocolates consist of solely two ingredients: cacao nibs and organic coconut palm sugar. They are high quality, healthy, and pure.” Al Mancini wrote that “Hexx offers five varieties of chocolate. Each features beans from a different country: Peru, Tanzania, Venezuela, Ecuador and Madagascar. They contain between 70 and 74 percent cacao, the dried beans of the cocoa tree. (By way of comparison, commercial milk chocolate can contain as little as 15 percent cacao, while commercial dark chocolate will generally range from 45 to 60 percent.) As a result, Hexx’s chocolates aren’t as sweet as a commercial candy bar. But tasting them side-by-side is as palate-wowing as sampling a selection of fine wines. One may contain hints of plums, peaches, vanilla and caramel, while the next offers up almonds, sweet marzipan and florals. And the texture of each is slightly different. It’s easy to be skeptical before you’ve tried them, and you may not get every flavor the chefs find, but the difference from one to another is nothing short of astounding.”

Michael Uzmann described Jinju best as “Every bit artisan with well selected beans forming the base of inspired bars, bob-bons, truffles, and confections crafted by a team of eight in an offsite professional kitchen. The JinJu storefront on the second floor of The Container Park is the chef’s first true brick n’ mortar and although many have seen her work over the last three years featured at various hotels, including The Venetian, the full collection in such a cozy space is truly something to behold. “JinJu Chocolates was founded by Jin Caldwell. Caldwell honed her skills as a Master Chocolatier and an award-winning pastry chef under the guidance of some of the world’s top pastry chefs in Las Vegas. Jin became a chocolatier for Ethel’s chocolates where, for six years, she provided product innovation direction for Mar’s Chocolate Inc.  Las Vegas Magazine wrote that “Jin Caldwell is one of a handful of chocolatiers with access to the Nacional cocoa bean from the Marañon Canyon in Peru. The rare Fortunato No. 4 was only recently rediscovered. The beans are slow-roasted, preserving the natural fruity, floral, and nutty favors. Caldwell crafts small chocolate disks, mixing them with favors like honey and raspberry, but the pure Fortunato No. 4 bar allows the famous bean to shine.”

The real difference, says Auboine, is that they make virtually everything in house–even the marzipan from almonds, the candied orange and grapefruit peels (a ten-day process), the Tonka bean and hazelnut ganache–and from natural, pure, even organic ingredients when available. “And we cut everything by hand. It’s a lot of work, but it’s a different quality.” Almost the only thing they don’t do is make the actual chocolate from the cacao beans, and that, says J-M, is on the horizon.  Caramel, fudge, ganache, marshmallow, gummies, licorice, coated nuts … Auboine’s team will make them all here, to go and to order. “The idea is, give the customer what they want,” says Auboine, “but artisanal, all natural flavorings, organic, no preservatives.” Auboine told French Quarter Magazine in an interview about his passion: ” I think passionate, hard worker because chocolate and pastry is my passion, and hard worker because we have to work hard in this business. It’s a lot of hours, especially at the end of the year like that for example, where we have a large amount of confections and product to prepare and we have to be a hard worker and because it is my passion I don’t count on that. While some people might not consider this “real chocolate” it’s still enough sweet delicious sugar fun.  The 13,000 square foot, two-story shopping destination is home to an 11-foot, 800-lb. Statue of Liberty replica hand carved from Hershey’s Milk Chocolate and the Empire State Building comprised of 1,800 Hershey’s Milk Chocolate bars, as well as dispensaries where shoppers can choose their favorite Hershey’s Kisses and Jolly Rancher flavors. Once inside, guests can take selfies in front of two good-enough-to-eat versions of New York City icons. A sculpture of the Statue of Liberty was carved from nearly 800 pounds of milk chocolate; a fanciful Empire State Building was erected using 1,800 chocolate bars.

The attraction offers free, self-guided factory tours from 8:30am-6pm, showing every step of candy-m aking in the chocolate factory. Guests may enjoy free chocolate samples at the conclusion of the tour.  The company’s founder and creator of M&M’s and Mars bars, Forrest Mars Sr., retired from the family’s business, Mars Incorporated, and created Ethel M Chocolates as a tribute to his mother and chocolate-making heritage. LVRJ Wrote of Ethel M. Chocolates that “Over the years, Ethel M has become part of the flavor of Southern Nevada. It has retail stores throughout the valley, including four at McCarran International Airport; out-of-state tour buses frequently visit the factory; and the annual lights show on its three-acre cactus garden has become a holiday tradition for many…It’s unclear why Mars chose to settle here. Some speculate it’s because Nevada’s lax regulations allowed him to sell the liqueur-filled chocolates, which were illegal in other states. Gudgel said Mars was a savvy businessman, and knew he could make the chocolate factory a destination to capitalize on Las Vegas’ tourism industry. ”

Vegas is not traditionally a chicken city. You never think about people going to Vegas, getting a cigar and a hot waitress, sitting down and eating a chicken after winning the jackpot. Yet, despite that, in the last few years, chicken restaurants have been popping up and more and more restaurants have been concentrating on having amazing chicken dishes, and more importantly, amazing fried chicken dishes.

It didn’t take a lot of pushing to visit all the local friend chicken places in Vegas as recommended by locals, and this is some of the places we’ve enjoyed and discovered that have made our list of the best fried chicken in Las Vegas:

Recommended to me by Andrew Pittard, as being one of the best fried chicken in Las Vegas, I did not know what to expect. This rustic style restaurant focused on American Comfort food does indeed have an amazing fried chicken dish (enough for two people, should note) that comes with one of the most delicious bacon cheddar biscuits and a fresh apple cabbage slaw. Local honey is “jizzed-over” (as explained by the waiter) the fried chicken giving it a nice flavor profile against the light spiciness of the batter. We even took a video below for the fun of it.

This little establishment with only a half-dozen or so tables has made a big name for itself for it’s amazing organic chicken dishes combined with Hainan Chicken Rice. My son gets them several times a week and absolutely thinks they are the best tenders in Las Vegas. There’s one universal thing about Soul Food Kitchens in Las Vegas: They have horrible reviews for bad service. M&M is no exception, with pretty bad Yelp reviews, but amazing reviews from the experts and critics who love it with the kool aid and cornbread. It’s partially about the experience, it’s partially about the sides, and a lot about the really good soul-southern fried chicken.

North Las Vegas Fights Jack in Box Evil

Perhaps scared by his unusually large round shaped head, some residents of North Las Vegas are fighting to keep Jack-in-the-Box from moving into their community. Not happy, they are using everything in their arsenal to prevent ground breaking.

The problem isn’t so much that the neighbors dislike Jack-in-the-Box per se, but that they don’t like the location of the restaurant. Located at the vacant lot on the corner of Centennial and Aliante parkways, it will be lined against the back of several homes and possibly disrupt the peace. Additionally, there will be no other place to leave abandoned tires and couches on that block.

The environmental pollution from this proposed Jack in the Box will cause us to change our entire lifestyle,” said concerned homeowner Don Hooks told 13 “Action Jack” News  “Our livability is affected adversely.”

Residents claim they have been tricked into not contesting the building of the new Jack in the Box Restaurant, because they only received a post card in the mail informing them of the meeting. They said there was nothing on the post card that would catch their attention, except the words informing them of the meeting.

The show is often paired with free concerts and other special events. It’s a modern twist on old-school Vegas. The show starts every hour on the hour from 7 p.m. to midnight. Celebrity Chef Robert Irvine Jumps off of Tropicana

The “Shirtless” Chef Robert Irvine, known as the host of Food Network’s  TV Show Restaurant: Impossible announced that he was opening a restaurant in the Tropicana in Las Vegas. In an exclusive press conference, the Chef jumped off the top of the Tropicana and rappelled down 22 stories to the bottom, where the press awaited his announcement.

In introducing Chef Irvine, Bob Sheldon, President of Las Vegas Operations for Tropicana’s parent company, Penn National Gaming, said, “Chef Robert Irvine has tackled some of the toughest culinary challenges around the world, and we’re excited to have him take on Las Vegas, right here at the Tropicana.  We are thrilled to be the Las Vegas home to such an acclaimed world-class chef.  With his unparalleled passion, energy and culinary skills, he is the perfect addition to our family.”

Commenting on his new partnership with Tropicana Las Vegas, Chef Irvine said, “From the moment I stepped foot in Las Vegas, I have been on a mission to break the barrier into the food and dining scene here.  I am excited to join the city’s impeccable culinary talent and I could not be happier with my decision to embark on this journey right here at the Tropicana Las Vegas.”
